While most things in your kitchen will eventually go bad, a jar of pure honey could theoretically sit on your shelf for thousands of years and still be perfectly fine to eat. It is nature's most durable snack!
How does honey stay fresh forever? It's a combination of three "magic" factors:
The best proof of honey's immortality is in history. Archaeologists exploring ancient Egyptian tombs found honey buried with pharaohs from over 3,000 years ago. When they tasted it (yes, they actually did!), it was still sweet and safe to eat. The only thing that happens to old honey is it gets thick and "crunchy" (crystallized), but you can fix that just by warming it up.
There is one catch: honey only stays fresh if it's kept in a sealed jar. Because honey is "hygroscopic," it loves to suck moisture out of the air. If you leave the lid off in a humid room, it will absorb water, and that water will eventually allow yeast to grow and spoil it.
Honey lasts forever because it is dry, acidic, and contains natural germ-killers. It is one of the few things humans eat that doesn't have an expiration date - as long as you keep the lid on tight!
